Steps
1. Buy the fresh pork. Mince it by hand until the stickiness of the pork is taught to be big as the best.
2. Add the tofu. (You can also blanch the tofu or squeeze the water out of it beforehand if you don't like the smell.)
3. Crumble the tofu.
4. Add the cooking wine, salt, egg, white pepper, sesame oil, cornstarch, and chicken essence, and mix well.
Stir along one.
5. Boil water in a pot, take a ball of filling, keep turning with both hands, ball into a tight, smooth surface meatball, gently put into the water.
6. Put the meatballs in one by one and boil them.
7. Cook for about 5 minutes, until the meatballs float slightly.
8. Add salt and sesame oil to taste, and add cilantro segments before serving.
