1. raw material treatment: after the shrimp is lifted from the net, it should be poured into a bamboo basket (which is usually about 7% of the container) and covered with a reed mat to avoid the sun. After the fishing boat returns, it should be poured on the reed mat, and impurities should be removed and small miscellaneous fish should be screened with a bamboo sieve, and then rinsed clean.
2. Shrimp boiling: firstly, clear seawater is injected into the shrimp boiling pot, generally accounting for 7% of the pot's capacity, and 4% of salt is added. After boiling the pot, the foam floating on it is removed, and the raw shrimps can be put into the pot. Generally, 5-55 kilograms of boiled fresh hairy shrimps are filled with about 1 kilograms of water in each pot, and then 1.25-1.5 kilograms of salt is added to each pot. In case of rainy days, the amount of salt is increased. Generally, the amount of salt used in spring and autumn is 4% of the weight of shrimp, and it should be increased appropriately in summer. Shrimp can be taken out by boiling once after it is put into the pot. Because the shrimp is small, if it is taken out by boiling water for 2 ~ 3 times, it will be easy to become powder and turn around after drying, which will affect the quality of the products.
3. Sun-drying: The cooked shrimps can be sun-dried after dripping the brine, preferably on the reed mat. When drying, the thickness must be uniform, and the bamboo pole should be pounded for 1 ~ 2 times, which is even and comprehensive, so as to make the drying consistent. Generally, it is subject to the fact that there is no wet feeling in hand, and it can be recovered by letting go and bounced when scattered on the field.
4. packaging and storage: dried shrimps should be cooled and packaged. Before packaging, clean the shrimp hair, shrimp chaff and inclusions in the breeze. Bags for packaging, 3 ~ 5kg each, should be filled and compacted. Packaged shrimps must be dried at the same time as the standard. The silo must not leak rain or be affected with damp. Don't move it after storage, check it frequently, and get out of the sun as soon as it gets hot.
