How to eat Yuqian:
1. Yuqian steamed buns:
(1) Wash the prepared Yuqian with clean water, add appropriate amount of salt, Stir the thirteen spices and light soy sauce evenly and marinate for 15 minutes;
(2) Mix the prepared flour and Yuqian together in a ratio of 1:3, stir evenly and mix them into pieces with your hands of small nests, put cold water in the pot, put the prepared nests evenly in the pot and turn on the fire;
(3) Wait until the water in the pot boils and check the time, about 25 minutes You can turn off the heat, and after 10 minutes, you can open the pot and take out the Yuqian steamed buns. Okay, you can start eating.
2. Yuqian steamed rice:
(1) Remove the stems from fresh yuqian, rinse them with water several times to slightly control the moisture.
(2) Put the drained elm money into a basin and add an appropriate amount of flour so that each piece of elm money is covered with flour. Do not have too much flour, which will affect the taste.
(3) Half a spoonful of salt. Don't make it too salty, keep the fragrance of the elm money, and mix well.
(4) Boil water in the pot, pour the flour-covered elm coins on the grass grate (a cage cloth is also acceptable), and cover the pot with a lid.
(5) Steam over high heat for 8 minutes. If there is a lot of steaming or a lot of flour, you can use chopsticks to stir it in the middle so that it is heated evenly and it is not easy to get caught.
(6) Add minced garlic, salt, vinegar, soy sauce, salt, monosodium glutamate, spicy oil, sesame oil, and a little cold water, mix well, and pour it on Yuqian rice when eating.
3. Yushuqian Shrimp Potstickers:
(1) Cut off the roots of Yushuqian and rinse them clean.
(2) Place the cleaned and drained elm money, chopped green vegetable stems and soaked fungus in a large cooking basin, add a small amount of salt and mix well.
(3) Add salt, sugar, light soy sauce, dark soy sauce, oyster sauce, thirteen spices, green onions, ginger and an egg to the minced meat and mix well.
(4) Cut the prawns into small pieces, add salt, pepper and ginger and mix well.
(5) Finally, mix the minced meat, vegetables and shrimp together.
(6) Take a piece of dumpling wrapper and wrap it into a potsticker shape with both ends unsealed.
(7) Put a small amount of oil in the pot until it is warm, add the pot stickers, fry for two minutes, add a little water to cover the bottom of the pot stickers, cover the pot, and fry over medium heat until the water dries out. Add a little more oil and fry for a few minutes. The whole process of frying pot stickers takes about 7-10 minutes.
