1. First, we pour the mushrooms into the basin, then add some warm water to it, and rinse it with running water. Rinse away some dust and other dirt, and then cut off the black roots of the shiitake mushrooms. There is a lot of soil attached to the roots of the shiitake mushrooms, which is difficult to clean. It is also relatively hard and tastes bad, so we usually remove it.
2. After removing the roots, we soak it in warm water, and then add some starch, about two tablespoons. Use the adsorption ability of starch to absorb the dirt hidden in the folds. In addition, after adding the starch, we need to stir it with our hands constantly. Let the starch soak for about five minutes, and then we gently scrub it with our hands to remove some black stains from the mushrooms.
3. Then we add two spoons of salt to the water and let the mushrooms soak for another 15 minutes. The salt can have a sterilizing effect, and it can also remove the earthy smell from the mushrooms, allowing them to be eaten. It tastes more delicious. Finally, we pick up the mushrooms and rinse them with running water several times until they are clean.
