When buying pig's trotters, try to choose pig's trotters that have washed Mao Mao's legs and cut them into pieces.

Put water in the pot, almost covering the pig's trotters. After boiling, pour in the pig's trotters, add star anise 1 piece, half cinnamon and two slices of ginger (remember to blanch the pig's trotters in boiling water to avoid affecting the appearance of the pig's trotters for a long time), and blanch for 5 minutes.

Wash and drain the scalded pig's trotters, and add oil to the pot to boil. Add star anise, ginger, cinnamon and pepper (according to personal taste) and stir-fry until fragrant. Stir-fry pig's trotters with cooking wine for 2 minutes, add crystal sugar (one pig's trotters can put almost 4 or 5 grains, and two pig's trotters can put 8- 10 grains), melt the crystal sugar in medium heat, pour in light soy sauce, stir well, and drown the pig's trotters with water.

Bring to a boil with high fire, add appropriate amount of salt (eat less chicken essence, which is very fresh), and stew with high fire 10 minute. Simmer at medium fire for 1- 1.5 hours, and then take out the pot. In order to have more appetite, you can put some shallots after cooking.
