Where did Dukang wine come from?

Dukang wine, the hometown of Du Kang, adds new fragrance to the old famous wine.

In Baishui County, Shaanxi Province, the sacred hometown of Cang Xie, the originator of word-making, and Du Kang, the ancestor of wine-making, Du Kang wine, which has a brewing history of more than 3,111 years and has been lost for nearly two centuries, is magical and unique.

in the ancient civilization history of our country, the culture of wine is extremely brilliant. Du Kang wine, known as the "elder statesman" of the wine forest, is a famous historical wine in China and a precious heritage of the Chinese nation. The wine was named after its ancestor Du Kang. For thousands of years, Dukang wine has been widely circulated and well-known, with praise all over the historical books. During the Three Kingdoms period, Cao Cao, Emperor Wu of Wei Dynasty, wrote in Short Songs: "Be generous, be considerate and unforgettable;" How to solve your worries? Only Du Kang's eternal swan song. It can be seen that Dukang wine has a long history. As early as the Three Kingdoms, it was famous in the ruling and opposition, and it was famous in China. Really: crown the wine soul of our nation and monopolize spring in the world!

According to historical data and archaeology, Dukang wine was indeed brewed in Baishui County, Shaanxi Province. The former site of Du Kang Liquor-making Workshop is in Kangjiawei Village, Dayang Township, Baishui County, Shaanxi Province. Surrounded by three mountains, this village has beautiful scenery, evergreen pine and cypress, and there is a big ditch nearby with crystal clear water. Because Du Kang makes wine on this ditch, it is named Du Kang ditch. There is a clear spring at the bottom of the ditch, which gurgles upward from the ground. According to the Qing Dynasty's "Baishui County Records", it is recorded that: "The spring is faintly spouted until winter, and it flows for four miles, and it enters Baishui River. The villagers say that this water still smells of wine." Also remember: "Du Kang takes this water to make wine", known as Du Kangquan. According to the analysis of relevant scientific research departments, water is neutral, low in hardness, low in calcium, low in impurities, heavy in proportion, high in carbonate substances, clear and easy to precipitate. Raw water tastes sweet and refreshing, and it is indeed the best spring for wine making. Making wine with this kind of water is especially smooth and fragrant. A long time ago, people built the Du Kang Temple next to Du Kangquan. In the forty-eighth year of Kangxi in Qing Dynasty (1719), it was repaired again. "The villagers go to the temple to worship and cook on the 21st day of the first month every year." Now an antique pavilion has been built above the spring, and the flowing water passes through the pavilion. At that time, Du Kang drew sweet and pure spring water here, carefully brewed wine, and people drank it, so that it could moisten the throat and promote fluid production, dispel cold and promote blood circulation, strengthen the spleen and strengthen the stomach, invigorate the spirit and prolong life, so it became famous day by day.

It is said that Du Kang made fragrant mash here by a strange method and presented it to the Zhou Emperor. After the Emperor drank it, he was so happy that he named Du Kang "Brewmaster". Since then, for thousands of years, people have always respected Du Kang as the originator of wine making, and built Du Kang temples in various places to offer sacrifices to the "God of Du Kang". Until the founding of New China, famous wine workshops such as Kweichow Moutai, Shanxi Fenjiu and Shaanxi Xifeng were still following this custom.

Du Kang is the "ancestor of brewing" in ancient Chinese legends. Du Kang was born in Kangjiawei, Baishui County, Shaanxi Province, and was buried here. According to the Records of Baishui County in the Qianlong period of Qing Dynasty, "Du Kang, whose name is Zhongning, was a Kangjiawei person in the county and was good at making wine." It also reads: "Du Kang's tomb is fifteen miles west of the county, and there is still a trough on the side of the tomb, which is quite cloudy." In addition, the location of Du Kang's tomb is marked in the county annals map. During the Wanli period of the Ming Dynasty, Du Kang Temple was built in Du Kang ditch. The inscription "Creating and Repairing the Duke Temple of Du", which was established in the forty-eighth year of Kangxi in Qing Dynasty, reads: "Duke Du is taboo about health, and his word is Zhongning. He was born in Kang Jiawei, a county, and he built a temple tomb. He is good at making wine." In addition, in recent years, four stone tablets have been found in this county, all of which record Du Kang's life experience and wine-making achievements. As for Du Kang's wine-making, Du Kang's wine-making is mentioned in ancient books, such as Shi Ben, Lu Chunqiu, Jiu Shi, Jiu Hao, Jiu Jing, Warring States Policy, Ji Yuan of Things, and China's Dictionary of Names. It is recorded that Du Kang used to be a "shepherd". Once, I abandoned the "leftover porridge in mulberry (mulberry cave)". "Once again, it smells strange." It was found that it was the aroma overflowing from the fermented rice in the mulberry cave. "Du Kang tasted sweet and got the secret of brewing." Since then, Du Kang has been making wine. "Shiben" of the Han Dynasty records: "Yidi started the wine mash and changed it into five flavors. Shao Kang (that is, Du Kang) made the wine." Xu Shen's Shuowen in the Eastern Han Dynasty said: "In ancient times, Yidi made wine mash, and Yu tasted it and it was beautiful, so Yi Di was sparse, and Du Kang made wine." Zhang Hua, a Jin native, said in the Natural History: "Du Kangshan makes wine." In the History of Wine, it is said: "Du Kang started to make wine." Tao Yuanming wrote in "Preface to Collection of Wine Poems": "Yidi makes wine, and Du Kang polishes it." Tang Pi Rixiu's "Poetry on the Wine Bed" says: "Didi has a sound, but Dukang is empty." Du Fu, a poet sage in the Tang Dynasty, once went to Baishui to go to his uncle Cui Shaofu during the Anshi Rebellion, and wrote many poems, such as "My Old House in Baishui is Happy with Rain", including: "Du Kang's efforts to persuade, Zhang Li's desire is nothing more than". Su Dongpo's poem "Stop Drinking" says: "From now on, there will be no Du Kang sacrifice." Shi Nianhai, a famous historical geographer in China, gave an inscription for Du Kang Winery in Baishui County after a field trip: "Du Kang Holy Land". For thousands of years, Du Kang has been honored as "the originator of brewing" by later generations, and has been handed down among the people.

Dukang Liquor gained a great reputation, and there was an anecdote: "It is said that Du Kang opened a hotel in Baishui Kangjiawei. Liu Ling, a famous scholar among the "Seven Sages of Bamboo Forest" in the Eastern Jin Dynasty, is famous for drinking. One day, Liu Ling passed by here and saw a couplet posted on the door of the hotel: "A tiger is drunk in a cup of mountains, and a dragon sleeps in two cups at the bottom of the sea". Horizontal batch: "Don't get drunk for three years without money". When Liu Ling saw it, she couldn't help laughing, thinking, I'm a famous Brewmaster, where I haven't eaten wine, and I've never seen such a boast. Let me drink all your wine and see if you dare to go crazy. Then, Liu Ling entered the hotel, and Du Kang made a toast. Who knows, after three drinks, Liu Ling only felt dizzy, and sure enough, she was drunk and stumbled home, drunk for three years. Three years later, Du Kang went to Liu Ling's house to ask for drinks. The family said that Liu Ling had been dead for three years. When Liu Ling's wife heard Du Kang come to beg for drinks, she was angry and resentful. She went to Du Kang and cried for a lawsuit against Du Kang. Du Kang smiled and said, "Liu Ling is not dead, but she is drunk." When they arrived at the cemetery, they opened the coffin and saw that Liu Ling was drunk and slowly woke up. He opened his eyes, stretched out his arms, yawned a lot, blew out a smell of wine, and proudly said, "Good wine, it smells good!" " This is the story of "Du Kang made Liu Ling drunk" which is still circulating among the people. Up to now, on the other side of Du Kang's tomb in Kangjiawei Village, Dayang Township, Baishui County, across a stream, is the tomb of Liu Ling, made of stone. The book "Du Kang Made Liu Ling Drunk" handed down from ancient times wrote: "The best wine in the world is Du Kang, and the largest amount of alcohol is Liu Ling ... After drinking three cups of Dukang wine, Liu Ling was drunk for three years." Of course, this is an exaggerated folklore. However, Dukang wine does have the reputation of "ten miles after opening the altar, three drunk houses next door".

Dukang wine is one of the precious heritages in China. For thousands of years, Du Kang has been regarded as the "ancestor" of China's wine making, which is immortal, but its wine-making method has long been lost.

In order to explore and inherit the traditional technology of Dukang wine and make the historical famous wine reappear in different ways, in 1976, Baishui Du Kang Winery in Shaanxi Province was rebuilt on the bank of Du Kang ditch, the site of Du Kang, covering an area of 76 mu. Inspired by the spirit of "Reviving Du Kang, Winning Glory for Our Country", the staff of the winery consulted historical documents, explored the legacy of Du Kang's wine-making, visited folk wine-making families, extensively adopted the experience of traditional koji-making, inherited the essence of ancient wine-making, went to Xifeng, went to Luzhou, and visited apricot flowers, so as to create a new style of Du Kang and win the reputation of famous wines in China. After repeated research and experiments, we learned from the crisp and sweet Du Kang spring water used for liquor-making in Du Kang, selected local high-quality barley, wheat and peas to compose music, selected Guanzhong high-quality sorghum as raw materials, fermented in the old mud pond, combined the traditional brewing legacy with modern scientific brewing technology, and finally made it by koji-making, fermentation, pit-setting, pit-picking, distillation and blending. Du Kang's famous wine has been reborn through the ages.
