How many Michelin three-star chefs are there in China?
Guangzhou chef becomes mainland's first young Michelin chef. Chinese caterer becomes the first non-European recipient of the Michelin Service Award. This is a historic breakthrough. Particularly striking is that Michelin enacted two brand new individual awards! Ending the history of Michelin only judging restaurants but not chefs in mainland China.
There are ways to become a sous chef:
1. Work your way up
According to the New Oriental College of Western Cuisine, most chefs start their careers in other culinary positions, such as a line cook. By going this route, you learned cooking skills while earning money. Chefs usually learn the techniques from the chefs they work with and may gain enough skills to take on the role of chef. This process can be time consuming. Many chefs work in kitchens for years before being promoted to chef.
2. Formal Education
College may not be the first career path that comes to mind when you consider becoming a chef, but more and more chefs are being trained at community colleges, training schools and four-year universities. Culinary students learn menu planning, food safety, management and cooking techniques. They spend most of their time in the kitchen when they attend classes, and they may also participate in internships.
3. Apprenticeships
Culinary institutions, trade groups and unions, as well as the Department of Labor, offer apprenticeship programs in the culinary arts. Apprenticeships combine formal instruction with on-the-job training. Apprentices work in a kitchen under the supervision of an experienced chef and receive classroom training. These programs last one to three years. To enter an apprenticeship program, you must be at least 17 years old, have a high school education or its equivalent, and be drug-free.
