The rebirth of old stuffing

Guanshengyuan, a famous food company in Nanjing, has a whole layer of windows pasted with paper in a factory building facing the street. The reporter's investigation started from this factory. After the Mid-Autumn Festival last year (the 9th day after the Mid-Autumn Festival), the mooncakes worth millions of yuan that Guanshengyuan Food Factory didn't sell out in that year were recycled from all over the country and transported to the workshop covered with enough paper. The recycled moon cakes mainly include bean paste, pineapple and lotus seed paste, which will be reused after several processes.

Peeling and stuffing are the first steps in processing these recycled moon cakes: some people are responsible for peeling off the plastic packaging of moon cakes, and some people scrape off the skin of moon cakes with a spatula and peel off the stuffing inside. Because pineapple stuffing is sticky and difficult to peel.

The peeled moon cake cores will then be transported to the semi-finished workshop to complete the second process: after being re-stirred and fried by this boiler, the moon cake cores will be melted into a whole. Next to the boiler, there are buckets and boxes for water.

When all this is done, there is only one last step: storage and refrigeration. Nearly 100 boxes of boiled bean paste stuffing were sent to the cold storage. A minute has passed for nearly a year. On July 2nd this year, three months before the Mid-Autumn Festival, Guan Sheng Garden officially started making new moon cakes. In the process of making from morning till night, open the door of the cold storage, and these fillings, which have been preserved for nearly a year, are quietly put into use. On the morning of July 3, 200 1 year, 4 boxes of lotus seed paste were directly dragged into the production workshop from the cold storage; On the afternoon of July 23rd, 20001year, 20 boxes of pineapple stuffing were dragged out of the cold storage. In the next few days, the reporter took several shots of moon cake stuffing coming out of the warehouse and putting it into production.

According to conservative estimates, there are dozens of tons of aged moon cake fillings in the cold storage where fillings are stored. Sometimes the mooncake stuffing is too hard to be used directly after freezing, so it will be put in the hut next door and stored overnight to soften the stuffing and then put into use. Workers have their own methods to judge whether the filling is soft or not. Many of these fillers have become moldy. According to witnesses at that time, it was covered with mold. There is also pineapple stuffing, and it can be clearly seen that the green part inside is the mold that grows. On this box of fillings, there is also an explanatory label indicating that their original production date is September 9, 2000. Sometimes, these moldy fillers will be recycled. 2001July 18, a batch of canned bean paste stuffing was sent to the semi-finished workshop for secondary reheating.

Finally, all these fillings were sent to the production line and processed into new moon cakes. In this workshop, mooncakes are continuously produced, with a daily production capacity of about 90,000 pieces. Today, they are already on their way to sell everywhere.
