Number one? School canteens (including kindergarten canteens), construction site canteens with more than 100 people, collective dining distribution units, central kitchens, catering services for major events and one-time meals with more than 100 people, and samples of finished food shall be kept for each meal. ?

The second one? Food samples should be stored in sealed special containers after cleaning and disinfection according to varieties, and placed in special refrigeration facilities, and kept under refrigeration conditions for more than 48 hours. The sample retention amount of each variety shall meet the inspection requirements, not less than 100g, and the name, sample retention amount, sample retention time, sample retention personnel and auditors shall be recorded.

Number one? Collective dining distribution units and central kitchens shall be equipped with inspection rooms suitable for the variety and scale of production, inspection equipment and facilities suitable for product inspection items, special sample storage containers and cold storage facilities.
