tea drinking can't be separated from tea set, which refers to the special utensils for soaking tea leaves, including pots, bowls, cups, plates, trays, etc. Another important manifestation of the ancients' attention to tea drinking is that they attach great importance to the art of tea set itself. A set of exquisite tea sets can complement each other with famous teas with unique colors, smells and tastes. With the prosperity of tea drinking and the evolution of tea drinking customs in various times, there are more and more varieties of tea sets and more exquisite textures. There are at least ten kinds of tea sets used in Chaoshan Kung Fu Tea, which are:
First, teapot
-Chaozhou dialect is called "Chong jar", and some are called "Su jar", because it comes from Yixing, Jiangsu, and is the smallest kind of Yixing teapot. There is a four-word formula for choosing a teapot, saying, "Small, shallow, neat and old." Teapots are divided into two-person pots, three-person pots, four-person pots and four-person pots, among which Meng Chen, Tiehuaxuan, Qiupu, Calyx Garden, Xiaoshan and Yuan Xisheng are the most cherished. There are many styles of pots, ranging from small as oranges to large as tangerines, to melon-shaped, persimmon-shaped, diamond-shaped, drum-shaped, plum-shaped and so on. Generally, there are many drums, so it is correct and vigorous. There are many colors of pots, such as cinnabar, antique chestnut, purple mud, stone yellow, azure and so on. However, regardless of style and color, the most important thing is that "the pot should be small, not big, and shallow, not deep". Because I don't have time when I'm older.
second: teacups
-there are four words for choosing teacups: small, shallow, thin and white. Small is a sip; Shallow water does not leave the bottom; White as jade is used to set off the color of tea; As thin as paper, so that it can be scented. Chaozhou tea drinkers often use white ground and blue flowers with a wide mouth, and the book "Ruo Shen Bao" at the bottom of the cup is precious, but it is not easy to get. Small white porcelain cups produced by Jingdezhen in Jiangxi and Fengxi in Chaozhou are also very good, commonly known as "Ginkgo Cup".
third: tea washing
-it is shaped like a big bowl, and there are many shades and colors. There are three kinds of kung fu tea to be cooked, one is used to soak the cup, the other is used to soak the pot, and the other is used to hold the water for washing the cup and the soaked tea.
fourth: tea tray
-tea tray is used to hold tea cups, and there are also various styles, such as full moon shape, chessboard shape, and so on. But no matter what style, the most important thing is the four-character formula: wide, flat, shallow and white. That is, the disk should be wide, so that more cups can be put in depending on the number of guests; The bottom of the plate should be flat, so as not to make the cup unstable and easy to shake; The edges should be light and the color should be white, all of which are to set off the teacups and teapots and make them beautiful.
Fifth: tea mat
-smaller than a tea tray, it is used for making pots, and there are also various styles, but in short, we should pay attention to "shallow summer and deep winter". The depth of winter is to put more boiling water into the pot for convenience, so that the tea is not easy to be cold. A layer of "mat mat" should be put in the tea mat. The "tea mat" is fried with loofah according to the shape of the tea mat. Therefore, those who want to use loofah instead of cloth mat, in order not to smell, the mat mat is used to protect the teapot. After the tea is sprinkled, the teapot should be turned upside down to avoid water accumulation in the pot. A little water will also make the tea taste.
Sixth: Water bottles and water bowls
-both have the same function, and they are used to store water in brew tea. Water bottle, neck-trimmed and shoulder-hung, flat-bottomed, with handle, plain porcelain blue and white is the best. There is also a kind with a neck and a mouth, decorated with a dragon, and it is also good to be called a dragon. Water bowls are also used to store water for brew tea. They are all the same size as an ordinary flowerpot, and there are many styles. The "Red Gold Color" made in the Ming Dynasty, with metal glaze, depicts the two tails of goldfish at the bottom of the bowl. When scooping water, the water moves as if the goldfish moved, which is a rare treasure.
Seventh: Dragon Tank
-The dragon tank is similar to the lotus tank planted in the court, or smaller. It is used to store a large number of springs, which are covered tightly and supported by wood, and placed in the corner of the study, which is antique. Dragons are also plain porcelain blue and white, made in the year of Xuande in Ming Dynasty, but it is hard to see.
Eighth: there's a stir of red in the quiet stove
-there's a stir of red in the quiet stove, Chaoan, Chaoyang and Jieyang have all made them, and the styles are very beautiful. There are also various forms, which are characterized by being long, six or seven inches high, and the furnace core with charcoal is deep and small, which makes the fire even and saves charcoal. The small furnace has a cover and a door, so it is economical and convenient to cover it when not in use. There is often a pair of elegant couplets near the small oven door, which adds more tea.
Ninth: Sand Chopper
-"Sand Chopper", the most famous one made by Fengxi in Chao 'an, commonly known as "Tea Pot", is made of sand and mud, which is very light. When the water is boiled, the small lid will automatically tilt and make waves. At this time, the water is just right for making tea. As for the steel pot, aluminum pot used to boil water to make tea, although it was also possible. However, the metal things used to boil water to make tea were not good enough after all, so it was not time.
tenth: feather fan and steel chopsticks
-feather fan is used to fan the fire. When fanning the fire, it is necessary to use force, but not to fan it around the oven door, so as to maintain a certain temperature and show respect for the guests. Therefore, the special feather fan is not only conducive to the display of "kung fu", but also a fan made of white goose feathers, with a big Wang over the palm and elegant bamboo handle, which sets off tea sets of various colors, such as red, green and white, and strong tea of golden purple, which is naturally interesting. Steel chopsticks are not only to clamp charcoal and pick fire, but also to keep the owner's hands clean.
