1. Tujia Three Pots
The three pots in Zhangjiajie are mostly fat sausage, pork tripe, tripe, sheep tripe, pig's trotters or pig's head meat. Two or three of them are specially processed by local local chefs and cooked in one pot. The eating method is also divided into dry pot and soup pot. The dry pot has no soup and is spicy. Tujia Sanxiaguo has now become the top signature dish in Zhangjiajie, ranking first in hometown dishes of 14 cities and states in Hunan.
2. Stewed chicken and duck with rock ear
Rock ear is a famous mountain treasure in Zhangjiajie, named after it grows on cliffs and looks like fungus. Stewed with chicken and duck, the color is light yellow, and the smell is elegant. This dish has been an annual offering of toast to the emperor since the Ming and Qing Dynasties.
Third, lotus dregs
, also known as "vegetable tofu", is a special dish that Tujia people often eat. Cooked with soybean paste (or mashed rice) mixed with side dishes (leeks, pumpkin leaves, cabbage and other side dishes), it looks like bean curd residue and has a unique taste.

fir, also known as "Pleurotus ostreatus", is mainly distributed in the mountains in the border areas of Hunan, Hubei, Guizhou and Chongqing, and is divided into two types: black fir and red fir. Stewing fir and bacon together is a common practice in Wulingyuan area. It is simmered slowly in a small fire, and the salty flavor of bacon and the aroma of fir blend with each other.
5. Misgurnus anguillicaudatus and tofu
is a favorite dish of Tujia people, which is a local must. The baking method is to put the loach in a jar or jar, pour clear water and put a small amount of salt, feed it overnight, wait until the loach spits out all the silt and other impurities in its stomach, then rinse it with clear water, pour the fresh loach into the tender white tofu, let them drill it randomly, and then drill a number of small holes in the tofu, and then stew it in an oil pan.
This dish is a delicacy for Tujia people to entertain their distinguished guests.
