It was first popular in the cold northern region of China, and people used it to rinse pigs, cows, sheep, chickens, fish and other meats. Later, with the increasingly developed economy and culture in China and the further development of cooking technology, various hot pots appeared one after another.
Yuan Shizu Kublai Khan likes to eat hot pot. One winter, when the troops were about to leave, he was hungry and insisted on eating mutton. The clever Zhao 'an chef sliced the mutton in a hurry, scalded it in a boiling pot, and added seasoning, chopped green onion and other things. Kublai Khan was full of praise after eating it. Later, when he became emperor, he still remembered this dish and named it "instant-boiled mutton".
