Introduction to the event
Logistic Education
The festival incorporates the concept of culinary education into each and every aspect of the event. The entire process engages students in the organization and implementation of the food festival. Student volunteers will advocate for the campus food participating in the festival and tell the stories behind the food. The first "Shanghai University Logistics Labor Education Practice Base (Service and Education Demonstration Post)" will be officially inaugurated and put into operation during the festival. The base is located on the second floor of the newly-built First Cafeteria on the Xuhui Campus of East China University of Science and Technology. The school provides students with nearly 150 square meters of interactive activity space, and carefully designs cafeteria labor education courses and interactive projects. Professional teachers lead students to participate in practice to improve their labor literacy and establish a correct view of labor.
Going Green and Environmental Protection
In order to advocate the concept of green living and consumption, all paper is made of environmentally friendly recycled materials, and the booths and display boards set up on site will be recycled after the event. No disposable tableware will be provided at the Food Festival event. The Green Future Green Health-themed booth design provides a conceptual edible tableware experience, allowing participating teachers and students to focus on the waste and pollution of disposable tableware. At the same time, the food festival used an artificial bicycle lighting ceremony to advocate a low-carbon lifestyle. During the event, all delicacies were served in limited quantities, guiding students to stop wasting and consciously respond to the "CD-ROM Action".
Food safety
Since 2010, the city's colleges and universities have been carrying out a continuous selection of "six T" (daily handling, daily integration, daily cleaning, daily standardization, daily inspection and daily improvement) cafeterias. By the end of the year, 305 canteens had been recognized as "six T" standard canteens (including 48 "six T" demonstration canteens), accounting for about 80% of the city's total number of university canteens.
Targeted poverty alleviation
Relying on the platform of "Agricultural School Docking", the logistics system of Shanghai colleges and universities has set up a model of direct supply of agricultural products to school canteens in impoverished areas, focusing on the promotion of "by vegetables into Shanghai", "Kashgar agricultural products into the campus". The city's colleges and universities set up special windows for poverty alleviation vegetables, the introduction of 22 varieties of vegetables from Daochen County, Zunyi, Guizhou Province, and the introduction of 34 varieties of agricultural products from the Kashgar region. In this food festival, we especially set up an interactive session of pro-poor vegetables.
Healthy Dining
This year's festival set up a "Green Future Green Health Theme Booth". Participating units made special green, healthy and nutritious creative meals, including fried pomfret with apple puree, which is rich in unsaturated fatty acids and trace elements; cheese, which is full of fiber and vitamin C, and vegetables with multicolored rice; and popped blueberries with iced skin, which is made of anthocyanin-rich blueberries, low-calorie oatmeal and other healthy ingredients. Nutritional ration charts for calorie, protein and fat content of each dish are calculated and labeled by a dietitian, so that everyone can focus on nutrition and health while focusing on taste.
