How many kinds of bullfrogs are there?

Recently, bullfrog has become the "focus" of media attention: because it carries a lot of parasites and germs in its body, once it is not processed thoroughly, it is easy to make people sick. Recently, the Beijing Municipal Health Supervision Network also issued a consumer warning to remind the public to "eat bullfrogs carefully".

The supply of bullfrogs has suddenly become tight

As soon as the news came out, in the restaurant gathering places such as Guijie Street and Guangwai Street in Beijing, many merchants marked the words "temporarily unavailable" under the dishes such as "Bullfrogs with pickled peppers". When the reporter asked about the reason, the waiter in the restaurant said that bullfrogs are very difficult to purchase at present.

There are also some restaurants that still serve bullfrogs. In a restaurant in Shichahai, the reporter saw that there were still guests eating bullfrogs. Upon inquiry, most people said they didn't know that bullfrogs would cause diseases. One customer said, "I know that bullfrogs are unsanitary, but as long as they are processed well, there should be no big problem."

The reporter then visited several aquatic products markets, and found that there were few stalls selling bullfrogs, and only one said it was still in stock. However, when asked about the purchase channel, the stall owner was secretive and stopped talking. According to statistics from Hongqiao, Tianmin, Jingshen and other large seafood and aquatic products wholesale markets in Beijing, at this time last year, the sales volume of bullfrogs in Beijing was 5,111 a day.

There are a lot of germs in the body

So, does the bullfrog really carry a lot of germs, and can it still be eaten? Professor Ning Xibin, director of the Department of Food Safety and Nutrition of Shanghai Fisheries University, told the reporter that bullfrog is native to North America and is the largest species of edible frog. Because of its strong adaptability and simple feeding, it is cultivated in many areas of China.

compared with common edible frogs, bullfrog is a kind of food with high protein and low fat, which is suitable for people with poor digestive function or hyperacidity, and also has nourishing effect for people with weak constitution or recovering from a serious illness.

"But compared with its nutritional value, the health problem of bullfrog is really serious. Due to the growing environment, there may be parasitic bacteria such as Vibrio cholerae in the body, especially vegetables such as' pickled bullfrog'. Once the heating is not thorough, it will be easily absorbed by the human body and cause disease. " Professor Ning stressed.

Even if you want to eat it, you have to cook it thoroughly.

Hu Keqiang, a supervisor of Beijing Municipal Health Supervision Office, told reporters that at present, Beijing Food Safety Office, industry and commerce, health and other departments are conducting carpet inspections on the "problem bullfrogs" in the city, focusing on farmers' markets and catering hotels. Once bullfrogs with unknown sources are found, they will be sealed on the spot, and the disease control personnel will be responsible for sampling and testing. If high-risk intestinal pathogenic bacteria such as Vibrio cholerae are found, they will be confiscated and destroyed in accordance with regulations.
