Deduction standard for food and beverage inspection
One or three certificates are complete (4 points): the staff has a valid health certificate. If you can't do it, deduct 2 points.
2. Kitchen and dining room (6 points): No cobwebs with dust, no leftovers, and clean articles. Deduct 2 points if you can't do one item.
3. Cooking utensils and containers (21 points): there are full-time disinfection personnel (well documented), utensils are washed once, disinfected twice (or washed), disinfected (thermally disinfected) and equipped with sufficient cleaning facilities (the maximum daily passenger flow is 1: 2-3) to ensure the need for disinfection and turnover, so as to be free from dirt and greasy. If the first, third and fourth items can't be done, each item will be deducted 3 points, and if the second item has an irregular facility, 3 points will be deducted.

5. Staff hygiene (6 points): The work clothes and hats are neat and tidy, and no ornaments are worn, so as to achieve "four diligence" and master general hygiene knowledge. Deduct 3 points if you can't do one item.
VI. Food hygiene (2 points); The food is fresh and clean. Deduct 2 points if you can't do it.
VII. Warehouse management (2): the room is clean, the articles are stored neatly, and the height is raised away from the wall. If you can't do one item, you will be deducted 1 points.
8. 21 points will be deducted for expired food found to be spoiled.
9. No mosquitoes and flies (3 points): 3 points will be deducted for each mosquito and fly found.
11. Tableware (6 points): No handprint, no hair, no tea stains, and 2 points will be deducted if it has never been done.
Xi. garbage (8 points): the garbage shall be cleaned in time, the trash can shall be covered, the trench shall be unblocked for a long time, and there shall be no garbage and dirt in the trench. If you can't do it, deduct 2 points in each direction.
xii. Employees (15 points): Employees who take the elevator, fight and take hotel finance without special circumstances will be deducted 3 points, and those who fail to do the previous item will be deducted 6 points each.
XIII. Employees (12 points): being late for work and leaving early, being absent from work, playing rough, not greeting guests, contradicting leaders and arguing with guests. Deduct 2 points from the previous item and 5 points from each other.
