Sliced mushrooms
1. First, we prepare a proper amount of mushrooms, blanch cold water in a pot, and remove dust and impurities. After blanching for about 1 minute, we pour out the mushrooms and wash them with clear water. Then, we remove the hard roots and cut the mushrooms into pieces for later use, so that the contact area is larger and it is easier to taste.
2. Prepare a catty of pork belly, peel and cut into pieces, cut a handful of garlic, wash the millet pepper and cut it into sections, and cut a handful of shallots for later use.
3. After all the ingredients are ready, we start cooking and add the pan to the vegetable oil pan. This step is mainly to prevent the meat from sticking to the pot. After sliding the pan, pour out the hot oil and leave a little base oil. Put the meat slices in the middle of the fire and fry the fat oil inside. When the meat slices turn white and the fat is transparent, pour in the garlic slices and stir-fry them together to give a fragrance. Add 2 grams of soy sauce to color, stir fry evenly. Then pour out the right amount of water and simmer it with high fire.
After 4.2 minutes, add mushrooms, add 5g oyster sauce to enhance freshness, 5g soy sauce, add a little salt, 2g pepper, 2g chicken essence and a little sugar to enhance freshness. The amount of sugar should not be too sweet, then cover the pot and stew for a while, so that the flavor of the meat slices and the umami flavor of the mushrooms can be fully integrated.
5. When simmering, always turn it over with a spoon to avoid burning the pot. After the soup is concentrated, put it into the red pepper section to increase the color, and then turn to high heat to collect the juice. When the soup is basically dry and evenly wrapped in the ingredients, add the onion and stir fry to make it fragrant and delicious.
Technical points:
1. The main purpose of blanching mushrooms is to remove dust and impurities from them. Don't cook it for too long, lest it lose its flavor.
2. Stir-fried pork slices and boiled water can make the whole dish full of meat.
3. Red pepper segments are mainly used for color matching, and friends who don't like spicy food can also use carrot slices instead.
