Ingredients: 300g turmeric, 750g trotters (the ratio is about 1:2.5), 50-80g rock sugar, half a bottle of sweet and sour diced rice and half a bottle of glutinous rice sweet and sour vinegar.
Exercise:
1. Slice Dioscorea zingiberensis. Don't put oil in the pot. Stir-fry until there is obvious ginger flavor, then pour in rock sugar and stir-fry until it melts.
2. Wash trotters with cold water and ginger wine. After draining, do not put oil in the pot, and fry until it is slightly golden. Pick it up and put it aside.
3. Pour the ginger juice into the casserole in turn, then add the fried trotters, and pour a bottle of diced rice and vinegar into half a bottle of glutinous rice sweet vinegar, almost without trotters.
4. Cover and cook for about 30 minutes on medium heat, then add the peeled eggs and cook for 10 minute on low heat.
