Stories about roasted oysters
Shantou enjoys the reputation of "Zou Lu by the sea, the hometown of delicious food", and there are many famous snacks, among which the most popular people are familiar with them. Recently, "China 2 on the Tip of the Tongue" was broadcast on CCTV's comprehensive channel, which once again set off an upsurge of "oyster fever". In addition to the searing of Chenghai Silverscreen oysters, Qiu Shuying, an old man who fried oysters in Xitian Lane, once again entered the audience's sight. Many Chaoshan people, especially returned overseas Chinese, have a special liking for Xitian Lane, but they know little about the history and present situation of oyster roasting in Xitian Lane. Recently, the reporter interviewed the citizens who had lived and worked in Xitianxiang. It is learned that Qiu Shuying, an old man who used to fry oysters in Xitianxiang, does not own the trademark right of Xitianxiang, and Hengxing Company, which owns the trademark right, has no entity operation and is preparing to open a shop.

Xitianxiang oyster roast is the most famous brand of "Old Shantou". In "Chaoshan Time-honored Cuisine" edited by Chen Hanchu, there is an introduction of "Xitianxiang Oyster Roast", which mentioned that in the early 20th century, a snack bar selling fried Oyster Roast appeared next to Juck Zhang Guild Hall (commonly known as Old Guild Hall) on Anping Road. Because of its exquisite production and excellent taste, it is deeply loved by diners, and "Roasted oysters in the old club" is also famous in eastern Guangdong.

Around 1930, Yang from other places wanted to join the "old club oyster roast" market, but unfortunately he couldn't get in, so he had to find an alley on the southwest side of the T-junction of Shengping Road and Tongping Road to set up a stall. Yang's oysters are crispy outside and tender inside, which tastes better. Diners come here from their old club. Soon, Hu Jinxing, Yao Laosi and others also came here to run the same business in Xitian Lane (now renamed as "Shengping Liu Heng"), forming a new oyster baking market. Yang and Hu Jinxing made great efforts to improve their cooking techniques and product quality, and created a famous snack brand "Xitianxiang Oyster Roast" at home and abroad.

Recently, the reporter visited Xitian Lane, which has long been listed as a small park old city reconstruction and demolition. Qiu Shuying, who is over 80 years old, still runs her "Qiu Shuying Oyster Roast" in the alley, and many citizens still come here to taste the Oyster Roast. Old Qiu Shuying still remembers the lively scene in the alley, selling sweet soup on the street and beef kway teow in the alley. However, because the food and drinks are placed on both sides of the driveway, only one motorcycle can pass at ordinary times. Xing, an old employee of Shantou Catering Service Corporation, recalled that when Xitian Lane was the most prosperous, there were many stalls selling food in the alley, and employees often had to be busy from 3 pm to 3 am.

According to Yao, head of Shantou Hengxing Trading Company, the operator of "Xitianxiang Roasted Oyster" was merged into Hengxing Trading Company under Shantou Catering Service Corporation on 1956. Subsequently, due to the loss of the title deed of Xitianxiang Oyster Bakery, it was impossible to apply for a business license, and the business of Xitianxiang Oyster Bakery began to wither and its operation stagnated. In order to keep the storefront signboard, the company asked Qiu Shuying, an employee of Hengxing Company who had worked as a helper in Xitian Lane, to contract the oyster baking shop business in Xitian Lane. At that time, considering the operational difficulties, the company also reduced the management fee of the oyster baking shop.

Since the operator of Xitianxiang Oyster Roast was merged into Hengxing Company after the establishment of New China, and Qiu Shuying was an old employee of Hengxing Company, Hengxing Company registered Xitianxiang as a trademark in 2004. Qiu Shuying and her family then applied to register Qiu Shuying's portrait and name as trademarks, and opened a shop near Danxia Village in the Eastern District to continue their oyster baking business.

Shi Zhenkun, former general manager of Shantou Hengxing Trading Company, told the reporter that Xitianxiang oyster roast is very popular with diners because the people who cook oyster roast are "very authentic", that is, diners come to taste oyster roast and never give it away, and they don't sell it for any money. "In order to ensure the high quality of oysters, crisp outside and tender inside, in order to keep this signboard." Shi Zhenkun said. Yao said that in the near future, the company will relocate its website and hire a famous chef to cook the brand "Xitianxiang" in the city. They hope that time-honored brands such as "Xitianxiang" can be protected and passed on, so that authentic Chaoshan snacks can continue to float to home and abroad.
