Broad bean petals are made of large dried broad beans (also called beans), which are swollen with water and shelled. There are soaked and shelled watercress for sale in the market. It costs 2 yuan a catty here. Every time I cook this dish, I sell 1 yuan douban, and the soaked douban can usually be prepared in a few minutes.

It doesn't matter if there are no ready-made beans in the market. Sell dried broad beans in supermarkets or farmers' markets and brew them yourself. Soak in warm water for 6 hours and change the water halfway. The broad beans will fully swell and the shells can be easily removed.
