Composition:
Grass carp1(2kg)
Side dishes: bean skin, potatoes, onions, Flammulina velutipes, peanuts.
Seasoning: bean paste, pepper, Chili noodles and Chili powder.
Recipe practice:
1.2kg grass carp and flower knife, marinated with cooking wine, ginger slices and salt and pepper powder for 2-3 hours;
2. Cut the ingredients into sections for later use;
3. Put the salted fish in the oven, bake at 2 10 for 30 minutes, then turn off the fire for 5 minutes, and then bake the fish skin.
4. After the fish is baked for 25 minutes, the side dishes can be fried. Stir-fry peanuts in oil, take them out, add garlic seeds, bean paste, dried Chili slices, Chili powder, Chili noodles and pepper in the oil pan, then add potatoes, stir-fry for 2 minutes, then add onions, bean curd skin, green Chili slices and Flammulina velutipes in turn, stir-fry until they are 5% cooked, and directly pour them into the baking tray of grilled fish.
5. Take out the baking tray and sprinkle peanuts and coriander on it.
