1. Wash Sanhuang chicken to remove internal organs and miscellaneous hairs. Knot the onion and slice the ginger.
2. Boil the water in the pot with high fire, put the head and body of Sanhuang chicken in boiling water and blanch it repeatedly for 3 times, then put Sanhuang chicken in the pot, turn off the fire and cover it for 30 minutes, take it out and cool it with cold water, and drain the water.
3. Take a cooking pot, add cold water (500ml), fragrant leaves, star anise, cloves, chives, ginger slices, salt and crystal sugar, stir well, bring to a boil with high fire, then turn off the fire and let it cool completely.
4. Add the bad marinade, carved wine and white wine into the boiling pot to make the drunken chicken marinade for later use.
5. After the cooked Sanhuang chicken is cooled, it is cut into pieces with a width of 5cm and a width of 3cm.
6. Put the chopped pieces of Sanhuang chicken into a deep container with a cover, pour in the marinade of the drunken chicken, let the marinade not pass all the pieces of chicken, cover and seal for 24 hours, then take it out and put it on a plate.

1. When making drunken chicken marinade, the heated juice must be cooled before adding bad marinade, carved wine and white wine, otherwise, the hot juice will volatilize the aroma of the wine, and the taste of drunken chicken is not rich enough.
2. When cooking Sanhuang chicken, if you don't follow the above method, you can also directly put the washed Sanhuang chicken into boiling water and cook it with low fire for 15 minutes, which tastes good.
3. When preparing the marinade, you can also change the dosage of various seasonings according to your own taste. However, it is worth noting that too much brine and white wine will make chicken a little bitter. If you want stronger wine, you can add more yellow wine.
