The following is the recipe of homemade mala Tang:
Ingredients: butter (or vegetable oil) 350g bean paste 150g dried Chili 80g lobster sauce 45g rock sugar (or sugar) 30g? 20g cooking wine (or rice wine) 20g minced garlic 30g Jiang Mo 15g cinnamon 10g tsaoko 10g pepper 5g clove 6? Pepper, 3 pieces of broth, appropriate amount of fish cake (side dishes are prepared according to your own preferences), fish balls, vegetables and mushrooms.
Practice steps:
1.? Put the butter in a hot pot. No butter can be replaced by ordinary edible oil.
2.? Heat to 60%, add bean paste, stir-fry until fragrant, and stir-fry until red oil.
3.? Stir-fry with minced ginger and garlic.
4.? Add dried capsicum, fermented soybean, crystal sugar, fermented grains, cinnamon, Amomum tsaoko, Zanthoxylum bungeanum, clove and pepper, stir-fry with low fire until crisp, and make hot sauce. If you are not in a hurry, stir-fry slowly with low heat. The longer you fry, the more fragrant it will be, provided that you can't fry on fire.
5.? Prepare soup. You can use sparerib soup and chicken soup made at home.
6. Boil the soup base material.
7.? Prepare side dishes: fish cake.
8.? Prepare side dishes: fish balls.
9.? Prepare side dishes: vegetables.
10.? Cook the prepared side dishes in a spicy pot.
