Small yellow croaker with Chinese sauerkraut
Ingredients: small yellow croaker, Sichuan sauerkraut
Accessories: ginger, onion, garlic, pickled pepper. Seasoning: salt, chicken essence, Shaoxing wine, a little sugar, broth.
Exercise:
1. Clean the small yellow croaker, marinate it with onion ginger and Shaoxing wine 10 minute, drain the water, and fry it in an oil pan until its appearance is crisp and yellow (don't fry it too crisp like salt and pepper small yellow croaker) for later use.
2. Heat the oil in the pot to 70% heat. Add ginger slices, garlic slices and soaked red pepper, stir-fry with shredded sauerkraut, add broth, add small yellow croaker, and season with salt, chicken essence and sugar.
3. Stew on medium heat 15 minutes, then sprinkle with chopped green onion and take out the pot.
