Recipe practice:
1. Prepare ingredients: cut tofu into pieces, and wash and cut fish into pieces.
2. Prepare auxiliary materials: cut onion, ginger and garlic.
3. Put the right amount of oil in the pot and simmer it to 50% heat. Add pepper particles to squeeze out the fragrance, then take it out and discard it.
4. Add onion, ginger and dried red pepper and stir fry a few times.
5. Add the whitebait and fry until brown.
6. Add appropriate amount of soy sauce, cooking wine and vinegar, stir-fry and color.
7. Add a proper amount of water to the ingredients, add garlic slices and star anise, and simmer for 15-20 minutes after the fire is boiled.
8. Add tofu pieces and continue to stew for about 10 minutes.
9. Add the right amount of salt and chicken essence and mix well. Sprinkle with onions and turn off the heat.
