Ingredients for braised noodles with eggs
200g knife-cut noodles 2 tomatoes
2 eggs 50g water-fried fungus
Salt 1 /2 tsp fine sugar 1/2 tsp
A little chicken powder 1 chive
2 tbsp salad oil 1 tbsp light soy sauce
Beat the egg with braised noodles Method
Step 1
Wash and dice tomatoes and fungus, beat eggs, and dice chives.
Step 2
Heat oil in a pan, add egg liquid, stir-fry until golden brown, place in a bowl and set aside.
Step 3
Leave the oil in the pot, heat it up, add diced tomatoes, and stir-fry until the juice becomes pureed.
Step 4
Add diced fungus and stir-fry for 2 minutes.
Step 5
Add light soy sauce and stir-fry until tomatoes turn color.
Step 6
Add the scrambled eggs and appropriate amount of water in step 2, and simmer until the soup thickens.

Add sugar, salt and chicken powder to taste, and turn off the heat.

Take another pot, add an appropriate amount of water and a little salt and bring to a boil. Add a knife to cut the noodles, cover the pot and bring to a boil over high heat.
Step 9
Use chopsticks to stir well to prevent the noodles from sticking. Change to medium to low heat and cook the noodles until they are cooked, then turn off the heat.

Put the cooked noodles in a bowl, pour the tomatoes and egg marinade fried in step 6, sprinkle with diced chives and mix well.
