Ingredients: potatoes, cooking oil, tomato sauce.
1. First, prepare two potatoes, peel them off with a peeler, and then clean them by hand.
2. Replace the washed potatoes with thin and even potato chips, and then cut the potato chips into even potato chips.
3. Put the cut potato chips into the basin, and pour appropriate amount of water to soak the excess potato starch. Soak potato chips to remove starch, then take them out and drain them for later use.
4. Pour a proper amount of water into the pot and bring it to a boil. Then pour the potato chips into the pot and cook for about 2 minutes. After cutting the potato chips, take them out and cool them with water.
5. After the potato chips are naturally cooled, put them in a fresh-keeping bag and put them in the refrigerator for about 2 hours. After the potato chips are frozen into frost, they can be taken out of the refrigerator and fried. Pour an appropriate amount of cooking oil into the pot, and when the oil temperature is heated to 60%, put the frozen potato chips into the pot and fry them.
6. Fry potato chips for the first time until the surface is colored, and then take out the oil control for later use. Then, when the oil temperature in the pot rises to 80%, add potato chips and fry for about 30 seconds again. When the potato chips are fried until golden and crisp, you can take out the oil control. Finally, put them on a plate and serve them.
