(l) First of all, the soup is good, and the fresh beef bones should be carefully cooked. This has been described in my previous works, so I won't say much here.
(2) Secondly, well, of course, it is handmade. There are many ways to do this, such as Lamian Noodles, handmade noodles and glossy noodles. I've said it before, but the most important thing is that gluten should be smooth and chewy in either way.
Today I will focus on several topping methods.
(l) Spicy meat noodles: Chop fresh beef into minced meat, cook in oil (oil can be a little more), add chopped onion, ginger and garlic, stir-fry red oil in Pixian bean paste, stir-fry a proper amount of Chili noodles, stir-fry minced beef evenly, add salt wine and soy sauce chicken essence to taste, and finally add spiced powder to stir-fry evenly.
Put the cooked noodles into a bowl, pour in the seasoned bone soup and pour a spoonful of spicy meat sauce.
(2) Braised beef noodles: cut fresh beef into large pieces and soak in clear water for one hour. After the water is boiled, beef is added with cooking wine, blanched, washed and dried. Stir-fry ginger slices in onion with oil, add fragrant leaves, cinnamon, fennel and angelica dahurica, release soy sauce to taste, and add enough water. Put the cooked beef into the soup pot, pour water into the raw beef, add a little crystal sugar, stew for about 45 minutes, stick the beef with chopsticks, simmer for a few minutes (you can soak the beef in the soup for a while if you have time), and take out the beef pieces to cool. Put the cooked noodles into a bowl, pour in seasoned bone soup, add some pork soup, and finally add beef slices and sprinkle with coriander powder. (You can also make bone soup delicious and cook noodles directly. )
Beef can be replaced with brisket, which will be more mellow.
Materials:
200g beef tenderloin, 5g ginger, garlic 12 petals, chopped green onion 1 teaspoon, 2 teaspoons of oil (30ml), 2 teaspoons of cooking wine (10ml), 4 teaspoons of Chili bean paste (60g) and Chili red oil 1 teaspoon (/kloc).
Exercise:
1. Wash beef and cut it into small strips;
2. Boil half a pot of water with high fire, add beef strips to drain the blood, remove, wash and drain;
3. Peel the ginger and garlic and pat with the back of the knife;
4. Heat a wok over high fire, add oil and beef strips and stir fry;
5. Add sugar and soy sauce after cooking wine, then add Chili bean paste and red oil and stir fry.
6. Add ginger and garlic, boiling water without meat. After boiling, turn to low heat, cover the pot and simmer for 3 hours.
You can cook a little more at a time and put it in the refrigerator if you can't finish it. Next time you eat noodles, you can boil the toppings.
