1. Mix flour, sugar, dry yeast and salt, add water, knead into dough, and knead vigorously until the dough is smooth and elastic. Add the softened butter and continue to knead the dough until it is gently stretched with your hands and the dough can form a light-transmitting film (expansion stage).

2. Put the kneaded dough into a bowl, cover with plastic wrap or a damp cloth, and ferment at room temperature for 30 minutes.

3. The volume of the dough increases after fermentation.

4. Press out the air from the fermented dough, roll it into a ball again, divide it into 16 portions, and let it rest for 10 minutes.

5. Take a small piece of dough and roll it into a long and thin strip on the countertop with both hands.

6. Pinch up both ends of the strip and twist it as shown in the picture. Twist the top twice to form a circle on the bottom.

7. Turn the two ends down and glue them to the bottom of the circle.

8. Place the shaped dough on the baking sheet (the dough is very soft, so be careful when handling it). Shape all the dough in this way. Mix 1 egg yolk and 1 tablespoon of water and mix well to form egg yolk water. Use a brush dipped in egg yolk water to brush it on the surface of the dough.

Tips for making small burritos:

1. All-purpose flour is the most commonly used flour for making steamed buns, steamed buns and other pasta at home. If you don’t have all-purpose flour, you can mix half high flour and half low flour to replace the all-purpose flour.

2. After shaping all the burrito dough, place it in the oven to bake immediately. Don't wait too long or the dough will rise too much.
