This is a folk song circulating in Huai 'an, Jiangsu Province, which originated from a touching legend left by Liang Hongyu, a famous anti-gold star in the Southern Song Dynasty. Five years after the establishment of Yan in the Southern Song Dynasty, 100,000 elite soldiers of Jin attacked Huai 'an, and Liang Hongyu led the troops to guard Huai 'an, and was besieged by nomadic people for a long time. In the absence of food and grass inside and military aid outside, he happened to find that horses ate cattail stalks, so he used cattail instead of grain to solve the food shortage. In the end, Qi Xin, the army and the people worked together to defeat the nomads. Therefore, Huai 'an people also call cattail "anti-gold dish". Since then, eating Pu cuisine has been widely popular in Huai 'an. Nowadays, Pu cuisine has not only become an indispensable main course in local banquets, the so-called "nothing without Pu", but also has gone out of Huai 'an and entered large and medium-sized cities such as Shanghai and Nanjing.
