Peanut oil, sesame oil, salt, oyster sauce, cooking wine, rice vinegar, corn flour and white pepper.
1. Cutting and matching:
Wash all the materials.
Peel off the protein and yolk of salted duck eggs and crush them with spoons respectively; Peel ginger and cut ginger; Cut the ham into small pieces; Flatten the onion with a knife, cut into sections, and cut the onion into chopped green onion.
Scrape ginger with a spoon and peel it.
Chopping ginger with the back of a knife makes it easier to get juice.
2. Baked tofu:
Cut the tofu into small pieces, put it in cold water and add a spoonful of salt.
When the water bubbles and won't roll, take it out for later use.
Try not to stir tofu halfway. If the distribution is uneven, gently shake the pot or push it with a shovel.
Baking in advance is to remove the fishy smell and astringency of tofu and make it better shaped. Cooking is not fragile, so it is not recommended to be lazy in this step ~ (this move comes from @) one by one).
3. Stir-fry "crab roe":
After the fire burns the pot red, turn to low heat and pour in a little oil.
Add scallion and stir-fry until fragrant.
It's probably fried to this extent (it doesn't need to be very dry, just smell like onions), and then take it out and throw it away.
Hot pot cold oil, cold oil blanking.
Add the dried shrimps and ginger and stir-fry until the dried shrimps crack and turn yellow slightly.
Add salted duck egg yolk, stir-fry until smooth and even, then pour in cooking wine (a porcelain spoon) and oyster sauce (a semi-porcelain spoon).
Add salted duck egg white and diced ham and stir-fry slightly.
Stir-fry crab roe with low heat.
The order of entering the pot: scallion, shrimp skin, salted duck eggs, yellow salted duck eggs and diced ham.
4. Braised tofu:
Stir-fry crab roe into casserole and add tofu.
Pour a bowl of boiling water (broth is better), cover it and simmer for two or three minutes.
You don't need a casserole, just stew it in the iron pot just now, but compared with "crab yellow tofu", the latter obviously sounds cool. (The bag must be fully loaded! )
Sprinkle appropriate amount of water starch (raw flour: water = 1: 3).
If you don't cover it, the juice will be collected by fire.
