Soak the snail with water and salt for one day and spit sand.

Boil water, add ginger slices, onion knots and citronella (you can put it or not, make the remaining spices in Dongyin court, and put it in to carry incense)

Pour the washed snail, add cooking wine, cook for about three minutes, scoop it up, dip it in ginger vinegar, and start.

1. Snails must soak for a long time before spitting sand.
