Fried, also known as long medicine fried, fried string, Leshan fried, is a Sichuan-style snack originated in Leshan. Fried skewers use common ingredients, such as beef, chicken skin, pork belly, cauliflower, leek and so on. The cooking method is "frying". Pay attention to oil but not greasy, crisp but not burnt. Fried string originated in Leshan, located in the west of southern Sichuan, and is rich in bamboo such as Phyllostachys pubescens. Since ancient times, people have used bamboo sticks to string ingredients, and skewers are made of bamboo sticks. After the reform and opening up, string stalls and small shops have become a major feature of Leshan Street, and fried string is one of them. Fried skewers are generally made by selecting materials, slicing, stringing, pickling, frying and seasoning. Among them, pickling is mainly used to remove fishy smell and taste from meat dishes; Seasoning is to sprinkle salt, monosodium glutamate, spiced powder and other condiments after cooking.
