Composition:
Tofu, cooked sesame, dried laver, preserved eggs, coriander, cooked peanuts, chicken essence, salt, sesame oil, Chili oil, onion, ginger, broth.
Exercise:
1. Cut the tofu into small pieces, blanch it with boiling water and put it on a plate for later use. Wash onion, ginger, coriander and dried seaweed, and cut preserved eggs into powder.
2. Put the broth into the pot, add salt and chicken essence, pour sesame oil, Chili oil and tofu into the pot, and sprinkle with coriander powder, peanuts, sesame seeds, shrimp skin and preserved eggs.
The practice of tofu flower:
Material: soybean 300G
Gypsum powder/fruit acid /G.D.L 1 teaspoon
2 tablespoons cornmeal
Water 2500 ml
Sugar water: 300G sugar.
Water 750 ml
3 slices of vanilla leaves and 2 slices of ginger.
Exercise 1: 1. Soak soybeans for 6 hours or more, and then mix with water in a blender.
2. Separate the stirred juice from the residue, and then boil the juice until it boils.
3. Mix gypsum powder and corn flour evenly with a little water, and then pour into the pot. Then wash the soybean milk juice from a height to dissolve gypsum powder and corn flour. Cover with a clean cloth for 30 minutes.
4. After that, open the cloth and remove the foam. Then mix with the sugar water cooked before, and the delicious tofu flower is finished.
Exercise 2:
Soybean 165g, water 8 cups, gypsum powder 1 4 teaspoons, raw powder 1 spoon, water1cup, sugar 250g, and lemon 2 slices.
Method:
1. Soak soybeans for more than 6 hours after cleaning, rinse them without peeling, and drain.
2. Put the beans into a blender and stir with 7 1/2 cup of water for several times, then filter the bean dregs with gauze, then put the soybean milk into a large pot, cook it with slow fire until the foam floats about 3 inches high, and then remove the foam on it to make soybean milk.
3. Mix Hang Seng powder and gypsum powder with half a glass of water, and remove impurities for later use.
4. Stir the gypsum powder evenly, pour the cooked soybean milk down and stir it a little, cover it with a towel, cover the pot, and let it stand for 20 minutes, then it will condense into tofu.
5. Boil the syrup until the sugar is dissolved, and you can eat it with tofu flower.
Adding lemon can remove impurities in syrup and increase flavor.
The utensils used to make tofu flowers must be very clean and free of oil and other impurities.
