Step 1: First, we break off the rape leaves, clean them, and then open them. Boil a proper amount of water in the pot, add a spoonful of salt and a few drops of cooking oil. After the water is boiled, we first blanch the rape for 20 seconds, then blanch the rape leaves together until they become soft, and then take them out. Then quickly put it into cold water for supercooling, and after it is completely cooled, take out the rape and control the water to dry for later use.
Step 2: Heat the oil in the pot, add the onion, ginger and garlic to saute until fragrant, and then add the blanched rape. Stir fry quickly and evenly on the fire. Because the rape has been blanched, it doesn't need to be fried for too long, otherwise the color will turn yellow and the taste will be bad if it is fried for too long. Just add salt and oyster sauce to taste, then pour in a little water starch to thicken, and turn over the fire.
