Cut chicken legs, potatoes and carrots into large pieces, and shred onions for later use.
Heat the oil pan and pour in the onion and chicken. Turn the chicken over until it is bright and golden, and then clip it out for use.
Continue to stir-fry onions, pour in potatoes and carrots, and stir-fry together for about a minute.
