Cooking steps:
1. Soak the yuba in advance, I use cold water. Three or four hours is fine.
2. Cut it into small pieces. My eater is a little guy, so I cut it shorter. At three hours, the middle of the yuba has not been soaked yet. After cutting, continue to soak for half an hour.
3. Cut the cucumber into pieces and match the size of the yuba.
4. Cut the onions and set aside. Garlic can also be used for stir-frying.
5. Put oil in the pot, add onion when it is 70% to 80% hot, and stir-fry until fragrant.
6. Pour in the cut cucumber and stir-fry.
7. Add yuba, stir-fry and cover. Be sure to open it promptly and stir-fry!
8. When the rice is mature, add a small amount of salt and pour in an appropriate amount of light soy sauce. If you like darker colors, add some dark soy sauce. Obviously, I didn't let it go.
9. It’s fried! Today's yuba was a bit overcooked! If the cucumbers are soaked in water in advance, or the cucumbers are fried separately for a while, it will be just right!
