1. Remove the old tendons from the beans and clean them.
2. Cut into shreds with a diagonal knife and set aside.
3. Blanch the shredded beans in boiling water until almost cooked, take out the cold water, drain and set aside.
4. Put a small amount of oil in the pot, sauté the minced ginger and part of the minced green onion and garlic.
5. Add shredded beans and stir-fry over high heat for one minute.
6. Add appropriate amount of soy sauce, five-spice powder, sugar and salt to taste. When ready to serve, sprinkle in the remaining chopped green onion and minced garlic, and stir-fry briefly.
