This is a method of hard bombing. The raw material is pork belly, scraped clean, soaked in blood, sliced into rectangular slices with skin, fried in a wok until it is raw, added with onion slices and shredded ginger, fried with balsamic vinegar for a few times to make it fragrant, added with light soy sauce and salt water, and fried until it tastes delicious. Finally, add the evergreen pepper pieces and stir-fry them for a few times.
Features: soft, light color, refreshing, fragrant but not greasy.
Second, stir-fry the meat with scallion.
This is a quick fire and short fry method. Select pork belly with skin, clean it according to the above method, cut it into domino-long pieces, and chop it into 6-7 cm long pieces with chopped green onion. Add vegetable oil to the wok and heat it to 60% heat. Put the sliced meat and green onions into a wok and stir-fry at high speed. When the sliced meat is just fried, add balsamic vinegar and cooking wine, add a little white sugar and shredded ginger, then pour the clear and fragrant juice into the chicken soup, stir-fry for a few times to wrap the raw materials.
Features: Soft texture, clear color and strong onion fragrance. There is no juice at the bottom of the plate after eating, only a layer of oil slick.
Third, spicy fried meat
This is a cooked, fried and spicy cooking method. Take pork tenderloin with skin, clean it, arrange it into large squares, and cook it in a warm water pot until the fat is completely exposed and 80% cooked. Take out, soak in cold water until the meat is white and colorless, then take out and cut into strips. Add all kinds of condiments (without soy sauce) into red pepper oil and stir well to form spicy juice. Add vegetable oil to the wok and heat it to 60% heat. Add the onion strips, add the balsamic vinegar to cook the fragrance, and pour in the meat strips and stir fry a few times quickly. Boil the spicy sauce and stir it a few times. Add vegetables to find a good taste before serving.

4. Sauced fried meat
This is a frying method. Take pork belly with skin, cut it into willow leaves, moisten starch, eggs, salt and soy sauce, stir well, add 40% hot oil, take it out, leave a little oil in the pot, add shredded ginger, shredded onion and vinegar, cook until fragrant, add sugar, sweet noodle sauce and yellow sauce, stir-fry until fragrant, and pour in sliced meat, fungus, day lily segments and yellow sauce. When eating, put the raw shredded onion, noodle sauce and meat slices into the steamed sandwich cake and serve.
Features: the soft film is thin, the sauce is fragrant, the main and auxiliary products are edible, and the charm is endless.
Five, bad fried small fried meat
This is a method of simmering. Wash the pork belly with skin, cut it into large pieces with pot thickness, stir-fry it in a wok at high speed, cook vinegar, stir-fry onion, ginger and green pepper for a few times, cook a strong sauce and seasoning, turn off the fire and cover the wok, and then fry for 5 minutes.
Features: Soft, colorful and fragrant.
