Prepare 1 Spanish mackerel, appropriate amount of salt and sugar, appropriate amount of cooking wine and soy sauce, appropriate amount of onion and ginger, and appropriate amount of oyster sauce. The operation method is as follows:
1. First, cut the Spanish mackerel into small pieces. Put the pieces into a basin, add salt, cooking wine, green onions, and ginger and marinate for 20 minutes, as shown in the picture below.
2. Heat the oil in the pot, add the Spanish mackerel and fry until golden brown on both sides, as shown in the picture below.
4. Place the fried mackerel on a plate and set aside, as shown in the picture below.
4. Then put additional oil in the pot, stir-fry the green onions, ginger, and star anise, add the mackerel and water, bring to a boil over high heat, then turn to low heat and simmer for 10 minutes. Add appropriate amount of salt if there is no more soup left. Take it out and put it on a plate. If you like chili pepper, you can fry it. It's done as shown in the picture below.
