Making:
1. Wash the mutton and soak it in water, put it in bloodletting water and change the water several times, about half an hour.
Note: it is best not to save this process, especially when you don't want to scald mutton.
2. blanching mutton: put the mutton block in cold water for a few minutes, turn off the fire when you see a lot of blood stains, immediately pour out the sewage and clean the mutton.
Note: Don't boil the water for too long, just a few minutes. Turn off the fire just before the water becomes clear and control the time.
3. Stir-fry the washed mutton pieces in a pot, and then add onion ginger, onion, pepper, aniseed, dried tangerine peel and red dates.
4. Stir-fry until the spices are fragrant and the meat turns yellow slightly. Add soy sauce, stir well, and then pour water to boil.
