Practice of Sichuan beef rice noodles
Beef rice noodle is definitely the most popular breakfast beef rice noodle in Sichuan.

Materials:

Appropriate amount of rice flour, 200g of beef, 600g of bone stick, appropriate amount of ginger, onion and garlic, appropriate amount of kelp, appropriate amount of chicken essence, appropriate amount of coriander, 2 star anise, a little pepper oil, an appropriate amount of pepper, a small amount of cinnamon, 2 pieces of fragrant leaves, barbecue seasoning 1 spoon, bean paste 1 spoon, cooking wine, salt and soy sauce.

Exercise:

1. Soak the rice noodles for later use.

2. Stir-fried beef with minced meat. Boil bovine blood in water first, take it out and cut it into pieces, then put it in a pressure cooker and add water and proper cooking wine to press it for 10 minute. Then prepare seasonings: ginger, onion, garlic, pepper, essence, star anise, cinnamon, bean paste and barbecue sauce (mixed in a small plate).

3. After the beef is pressed and taken out for standby, you can start adding rapeseed oil to the oily wok (so that you don't have to add other red oil separately after eating rice noodles). Add all seasonings in turn, stir-fry the seasonings, then add beef, 1 teaspoon salt and 1 teaspoon soy sauce and stir-fry.

4. After the beef is fried, add a small bowl of water to the pot and start to burn the beef. When the water is almost dry, turn off the fire, clip out the visible seasoning and throw it away, then take the beef and oil out of the pot. Fried beef with minced meat. I am running out of oil, so please remember to pour more oil! )

5. To make rice-based soup, remove the bleeding water from the bonzi bone and put it in a pressure cooker, pour a proper amount of water, add a piece of ginger (sliced), five garlic, onion, salt, chicken essence and kelp silk and press it for one hour (after the pressure cooker is inflated, press it on low heat).

6. When all the materials are ready, boil the water in the pot. After the water is boiled, start to heat the rice noodles, and eat as much as you want! When the rice flour is in the pot 10 seconds, it should be taken out of the pot as soon as possible to avoid breaking the powder. Pour a few spoonfuls of hot bone soup on the rice noodles, add hot minced beef, coriander, chopped green onion, a little salt and a little pepper oil, and you will finish a delicious bowl of beef rice noodles!

Cooking tips

1, finally, some seasonings in rice noodles can be changed according to their own tastes! Because this beef rice noodle is usually eaten as breakfast in our local area, the seasoning I mixed is slightly lighter;

2, rice noodles can be soaked once more, and can be fished out and put in the refrigerator next time.
