Spiced sauce dry material: tofu 1 chunk (about 500g).
Seasoning: onion 10g, ginger 10g, star anise 3, dried tangerine peel 3g, fennel 2g, pepper 1g, broth 750g, refined salt, soy sauce, sugar and vegetable oil.
Exercise:
1, remove the hard edges around the tofu and put it in a boiling pot to remove the beany smell.
2. Take out the tofu, wash it in drowning water and let it cool. Change the knife and cut it into 1 cm, 5 cm square pieces, and wrap it with gauze.
3. Put the pot on fire, let the vegetable oil burn to 60% heat, then add the onion and ginger slices to simmer, add the star anise, dried tangerine peel, fennel, pepper, salt, soy sauce and sugar, and simmer for 10 minute to make the sauce.
4. Put the wrapped tofu into the sauce pan, cover it and cook for about 15 minutes. Remove the gauze bag, take out the gauze, and air-cool it into "dried spiced sauce". When eating, cut the "dried spiced sauce" into strips and serve it on a plate.
