Linyi Babao Douchi is made of eight raw materials, namely sesame oil, white wine, almonds, fresh ginger, black beans, pepper, perilla leaves and eggplant, and is named Babao Douchi after a year of closed natural fermentation.
Douchi is delicious, but it's not easy to make. It uses a lot of materials, its manufacturing process is complicated, it takes a long time, and it is easy to break down if it is not paid attention to. The traditional production methods of Linyi are as follows:
Cook black beans, take them out and dry them in the sun, then seal and ferment for a week, and take them out after one week. Black beans turned into hairy edamame. Wash and dry the edamame seeds, and wait for the encounter with other ingredients.
Pepper should be cooked without frying, and eggplant should be cut into small pieces of equal size. Cook the almond rice and wipe off the almond skin. Ginger and perilla leaves should also be sieved, and then salt should be added.
Most of the raw materials of Babao Douchi are easily available in autumn, so the season of making Douchi is mostly in autumn. During the curing period of 15 days, after 15 days, add sesame oil and wine into the pickled beans, stir them evenly, and then put them in a jar for sealing.
Ceramic jar is the best jar for pickling fermented beans, which is easy to preserve for a long time and difficult to lose fragrance.
