Roasted pig is a famous ethnic dish of local Yi people in Jingdong County. It is said that this barbecue cooking has a history of more than 500 years. Because it tastes crisp and delicious, it has been handed down. The practice is to slaughter and clean a bony pig of about 80 kg, then around its feet and internal organs, apply salt, wine, pepper, garlic and other seasonings to the pig, then use a special iron fork to pass through the pig's body, turn over the chestnut charcoal fire, and apply brine and sesame oil while roasting until the whole pig's body is brown and crispy. When eating, cut the roasted pork into pieces and mix with seasonings such as soy sauce, sour vinegar, pepper, onion and coriander. Roast pork maintains its original flavor, fresh and pure taste, which is a delicious food that the Yi people will only provide when celebrating or entertaining guests.
