The big rooster can be stewed deliciously and nutritiously in the following way:
Cut the big rooster into pieces, wash them, blanch them in cold water, remove them, wash them and set aside.
Heat oil in a pot until 70% hot, add ginger, garlic and chicken pieces and stir-fry until fragrant.
Add water to cover the chicken, add dried chilies, peppercorns, cinnamon, and bay leaves and simmer over medium-low heat.
When the soup is boiled until half dry, add salt, sugar and soy sauce, stir well and continue to simmer for 10 minutes.
