According to legend, "Dongpo Meat" was created by Su Dongpo when he was well-known in Xuzhou, and was originally named "Dongpo Meat Appreciation". In A.D. 1077, Su Shi was appointed as a well-known person in Xuzhou. Less than four months after he took office, he met the Yellow River breach. As the father of Xuzhou, Su Shi resolutely led the people of the whole city, stuck to the city wall day and night, "played house without entering", commanded the military and civilians to block the defense, and finally saved the city.

In order to thank the "parents" who share the joys and sorrows with the people, people have killed pigs and cows and sent them to the well-known yamen with gongs and drums to show their gratitude to Mr. Dongpo. Although Su Shi repeatedly refused, the people still insisted on giving it to Mr. Wang. Su Shi had no choice but to accept it completely and personally instructed the chef to cook braised pork and give it back to the people, so he called it "Dongpo Sichuan style pork".

Not long after, Su Dongpo was arrested and imprisoned for Wutai Poetry, but with the intercession of Empress Cao and courtiers, he survived his death and was demoted to Huangzhou. At that time, Su Shi often cooked by himself, and braised pork was the best. He once wrote a poem: "Slow fire, less water, full fire, is beautiful." A few years later, Su Shi was transferred to Hangzhou, and it was known that the real "Dongpo Meat" was born at this time.

People praised Su Dongpo for doing a good thing for this place. I heard that he likes to eat braised pork. During the Spring Festival, they all gave him pork as a token of their appreciation.

Su Dongpo collected so much pork that he thought he should share it with tens of thousands of migrant workers dredging the West Lake. So he asked his family to cut the meat into cubes and made the famous braised pork. Together with wine, it is distributed to every household according to the roster of migrant workers. But when he was in cook the meat, he heard that "sending with wine" means "burning with wine". I didn't expect braised pork to be more crispy and delicious. People who received the meat praised Su Dongpo for his unique cooking method and delicious taste, so he named it "Dongpo Meat".
