In Suzhou, an ancient water town, the time of group worship is from March to Tomb-Sweeping Day in the solar calendar every year, and Tomb-Sweeping Day is its peak, because most Suzhou people will worship their ancestors with group worship in Tomb-Sweeping Day. Over time, more and more people like to eat green balls, and the production time of green balls will last for more than ten days from Tomb-Sweeping Day. The reason why I like dumplings is because when I first came to Suzhou, Suzhou Apo downstairs gave us the dumplings she made for the first time in spring. The first time I ate the green ball, I fell in love with its delicious and sweet taste.
At the beginning of March every year, that old woman is busy with the Youth League. She washed the freshest buckwheat grass, put it in a stone mortar and beat it repeatedly with a stone hammer. After that, put the smashed grass ball into the pot, bring a bucket, put a strainer on it, and squeeze the grass ball out. After squeezing, grandma will filter the grass juice, add some water and lime, then mix it with glutinous rice flour in proportion, knead it into a big green dough and wake it up for a few hours. Then she steamed the red beans, fried black sesame seeds with white sugar and pressed them into mud to make stuffing. After the dough is awakened, divide the big dough into small dough, press a hole in the middle, put the bean paste in, then pinch a little on it and pull off the excess noodles to make the dough. Finally, the green balls are steamed in a steamer with gauze. When steaming, the aroma of the youth league permeates the whole corridor, which makes people salivate. When I opened the lid, white steam came out. Then, I saw green balls, such as glittering green gems. Grandma painted a layer of oil on the green ball, then cut the middle of the two green balls with scissors and handed me a green ball with a smile. I can't wait to pick up the hot green ball that I just cut, blow it, take a bite, and suddenly my mouth is full of faint grass fragrance, which makes people feel like they have come to a green grass. Take another bite, and they will taste the sweetness of red bean paste and black sesame seeds, mixed with the fragrance of grass. Sweet but not greasy. It is really delicious on earth!
This is my favorite smell of spring ―― the smell of youth league.
