Recipe practice:
1. Wash fish head, ginger, onion and garlic for later use.
2. Rub salt, chicken essence and pepper on both sides of the fish head and marinate until 10 minute.
3. Sprinkle chopped pepper evenly on the fish head and drop one or two drops of cooking wine.
4. Boil the water in the pot and steam it for 8 minutes. After steaming, sprinkle with soy sauce and shredded onion.
Put the oil in the pot when it is hot. When the oil is hot enough to smoke, pour it on the oil head as soon as possible.
