There are two ways to stew soybeans with pig's trotters. One is red and bright, similar to braised pork. It needs to be fried with sugar, and some spices will be added to taste when stewing. One is stew, in which the pig's trotters are directly blanched, and water is added to soybeans, and the stew is milky white. The taste of pig's trotters is different in two different ways. In the first way, pig's trotters taste fragrant and ruddy, but soup is not suitable for direct drinking, which is more suitable for rice. The second way is light, the soup is delicious and the meat is fragrant.
Here are two ways to make stewed soybeans with trotters.
First method
Ingredients: trotters, soybeans, ginger, green onions, star anise and dried peppers.
Condiments: salad oil, salt, rock sugar, cooking wine, soy sauce, soy sauce, aged vinegar and pepper.
Step 1: Wash the soybeans five hours in advance and soak them in clear water. Add a proper amount of cold water to the pot, add trotters, ginger slices, onion segments and cooking wine, cook over high fire until foam floats, remove trotters and wash them with warm water.
Step 2: Add a little salad oil to the pot, add rock sugar and stir-fry until it is red, then pour in trotters and stir-fry quickly to color, then add onion, ginger, star anise and dried pepper to stir-fry until fragrant, and then pour in appropriate amount of boiling water.
Step 3: Pour the soaked soybeans, add salt, cooking wine, soy sauce, soy sauce, rock sugar and a little old vinegar, stir well, and then pour all the ingredients together with the soup into the pressure cooker.
Step 4: Continue to press for about fifteen minutes after the fire. After the pressure cooker deflates naturally, pour all the ingredients into the wok, sprinkle a little pepper and thicken the soup with high fire.
The second method
Ingredients: trotters, soybeans, ginger, onions and shallots.
Seasoning: salt, rock sugar, cooking wine, pepper.
Step 1: Wash the soybeans five or six hours in advance and soak them in clear water. Wash the chopped pig's trotters, put them in a pot with cold water, add ginger slices, onion segments and cooking wine, boil them with high fire, skim off the floating foam, remove the pig's trotters and wash them with warm water.
Step 2: Put the trotters in the pressure cooker, pour in the soaked soybeans, then add the ginger slices, onion slices, rock sugar and a little cooking wine. After the fire boils, turn to low heat and press for 20 minutes.
Step 3: After the pressure cooker is naturally deflated, add appropriate amount of salt and pepper, sprinkle with chopped green onion and serve.
Tip: There are two different ways. Soybeans need to be soaked in advance, otherwise it will be difficult to cook. When scalding pig's trotters, put cold water in the pot and let go of water in the pot, the meat will shrink immediately, and the blood in the bones will not be boiled easily. Choose your favorite method according to your personal taste.
