There are more than enough steamed dumplings every year.
Step 1
Ingredients: 50g of flour, 0/00g of sodium sulfate/kloc-,3g of monascus powder, 0/30g of stuffing/kloc-(see the recipe for seasoning details), 20 lotus seeds, and appropriate amount of water.
Second step
I use zucchini stuffing. You can choose the stuffing according to your preference. Clean the zucchini, add a little salt, and squeeze dry for later use.
Third step
Add cooking wine and soy sauce to the minced meat and stir well. Add Jiang Mo, white pepper, sweet noodle sauce and cooking oil and continue stirring.
Fourth step
Sprinkle chopped green onion, don't beat it yet, and pour the right amount of sesame oil on the chopped green onion. The advantage of this is that the onion flavor is wrapped in oil, and then continue to beat, so that the meat is more fragrant. Finally, add the pre-squeezed zucchini, add some salt and mix well for later use.
Step five
Add appropriate amount of water to monascus powder, boil, and filter out red water for later use. Stir the flour and corn starch evenly, and pour the boiled and filtered monascus powder water while it is hot. You don't need much water, just scald half the flour.
Step 6
Cook half of the flour until it is cooked, and mix the other half of the flour with warm water to make a dough with moderate hardness. After mixing, let the dough stand for about 15 minutes.

I made ten goldfish steamed dumplings for the noodles in this ingredient list. Divide the dough into ten equal parts.
Step 8
Take a tablet and roll it into a circle. Place the filling in the center of the dough.

Pinch the two sides of the dough together, without moving the head and tail.

As shown in the figure, take two lotus seeds, put them in the opening at one end, and fix the noodles around the lotus seeds to make fish eyes.
